The definition of prime is “of the best possible quality; excellent”. Prime beef is the highest quality standard for beef. The USDA's top three standards of beef are Prime, choice, and select. The difference of the three is the overall quality of the meat. Prime beef comes from young and well-fed cattle. It has abundant marbling which is the amount of fat in the meat.  This provides a deliciously tender, buttery, and juicy steak.
